from his video on yesterday's NYTimes. this is a great make ahead. You just peel and cut sweet potatoes into wedges, par boil until barely tender, Toss in EVO and S&P, put a sage leaf on each, wrap in procuitto (sp?) (I used spec from Costco)place in a baking dish, sprinkle with more EVO and bake at 425 for 10 or 15 min.

I prepared in the afternoon and baked it off just before dinner. Easy and delicious.
