I made Michael's Egg Flower Soup last night. It was easy and delicious!

I was sure the eggs were going to scramble and I'd have lumps of eggs in the soup. Not at all! I got soft shreds of egg in a very flavorful broth. I added chopped cilantro with the green onions for garnish.

I sent a quart next door to a neighbor who is recuperating from pnuemonia and mentioned a couple of months ago he had his first egg drop soup and loved it. His wife answered the door and when he heard the mention of egg flower soup he ran down the stairs. Guess he is feeling much better!

Thanks, Michael!

Glad you liked it, and it sounds like your neighbor got the cure. We are the "soup carriers" in...

...our circle. People never forget a delivery of good, nourishing soup when they don't feel well. I often bring this one when I don't have time for a full-blown chicken soup.

This sounds like th ticket Michael. Making this tonight. Great timing, and just a note, a local

grocery store (Wegmans) is giving free antibiotics to people - with perscription - until the end of March.
