I made Olga's Danish Easter Pastry last weekend

It was very good. The dough is super simple and easy to handle. Rolling dough out is not my strong point and my counter really doesn't accommodate rolling to a 24" square, so it would have been easier to work with half the dough at a time. I would probably bake first half and do the second later so I didn't have to cram two half-sheet pans in the oven at once or let one pan rise for almost double the time while the other was in the oven. I used the raisin filling and loved it. I could have done a better job sealing the edges, because a fair amount bubbled out. Watch closely while in the oven. Once it starts browning it browns really quickly.http://eat.at/swap/forum/index.php?action=display&forumid=1&msgid=929

Don't you just love when a recipe works out! For some good suggestions on

how to freeze this dough for other recipes, check out Carole Walter's
"Great Coffee Cakes, Sticky Buns, Muffins & More: 200 Anytime Treats and Special Sweets for Morning to Midnight"

To be perfectly honest, I checked this book out 4 times and yet refused to buy it because I would NOT be able to NOT make all of these recipes and owning it would put that temptation too close. THAT is how good her recipes look and how well she explains her methods.

I'd check it out, pick a recipe, realize I would eat it all and turn the book back in. Three months later, I'd check it out, find another recipe I'd not be able to resist and turn it back in.

Also, also...I've used the dough cycle on my bread machine to good success for these types of yeasted recipes. In fact, I just made Model Bakery English muffins again using the dough cycle.

I did think about freezing half

My brain wasn't processing re-doing the dimensions to make things come out the same sizes on the folding & rolling.

I so adore baking and I miss being in a bigger office where I could take the baked goods to work. There are only three of us most days where I am now, and one of them has the palate of a picky toddler.
