I did not have a leek so I added shallots, but everything else is the same. It is very pretty. I am serving it with Fontina Cheese and Piquillo peppers panini sandwich made with white bread from a local bread shop.

 
Wonderful that you loved it too - made it a total of 6 times already!

last batch included a little spinach that was hanging out in the fridge for too long

cannot tell you how much I love this soup - and the zucchini I posted a couple of weeks later is also wonderful, in case you want to try another tasty soup

 
Just for fun and because I need to get it used up, I add two tablespoons of heavy

cream last night while reheating. The soup is very silky as is, but this took it over the top. It was delicious and I will be making this again. I have the zucchini soup next on my list

 
NOOOO! NOt at all the same....

I never blog about stuff I hate...

the soup from hell was an attempt to make a caramelized broccoli soup in the pressure cooker, nothing to do with the silky soup from the blog that calls for quick cooking and coconut milk
