Thanks suz for the recipe. It was fabulous! I made the chinese variation, that you suggested, and really enjoyed it. Any ideas what to do with the duck grease/fat? How long will it last in the fridge...I am currently thinking roasted potatoes...

Several helpful people on this site guided me toward potatoes in duck fat. I now treasure that

grease. I just roast chunks of potato in a little, with some rosemary. I"ve been wanting to try some fries, oven-roasted in duck fat with sea salt and powdered beef bouillon sprinkled on.

In fact, I've been trying to buy duck fat at the local gourmet shop and it's always sold out.

Richard has some recipes that use goose fat. I wonder if this would be the best substitute.

And it lasts forever, just in the fridge. Forever?...so far 3 months.

 
Barb, it will last indefinitely if there are no juices at the bottom. You can freeze it to be safe.

Potatoes and duck fat are a marriage made in heaven. Try sauteing them, then adding chopped garlic and parsley at the very end.

It is interchangable with goose fat, and I've used it for recipes calling for a little lard, such as Mexican rice.

I've been keeping the duck fat in my fridge and have only used it once w/my brussel sprout w/bacon recipe. Potatoes are the way to go but we stay low carb.

 
Ohhhh, (shuddering with joy) Duck Faaaat. It's just the best!

I keep mine in a tub in the freezer and use a stubby knife to chip out some when I'm cooking.

So far I put a chunk or two in with quartered yukon potatoes and roast them - such a great flavor. I've also roasted fish in this fat - melted the fat on the baking sheet then adding the filets. Sauteeing mushrooms, or chicken breasts. It's just the best stuff!

edited to say that I really did not order the cookbook; the : ) may have led you to believe that I did...But, not...I am amazed that there is a cookbook for $250.00 just for duck fat!!
