I made the best "very strawberry" cupcake icing tonight

I have a big container of freeze dried strawberries. I reduced a lot-probably a cup & a half, to powder in the food processer. put the powder through a sieve to sift out leftover chunks. Beat powdered sugar & butter, thinned with cream, then beat the berry powder in. Very fruity & bright, with a nice bit of a tart edge. Next time I'd use even more. I put it on white cupcakes.

 
I saw that show on Saturday, and was intrigued by the freeze dried strawberries

all those recipes looked great, except for the Bombe...to much work for me.

 
Winco has huge tins in the "prepper" section. About $14 but it is a LOT of berries

I want to try them in "forgotten cookie" meringues, or in whipped cream.

 
Holy Diverticulitis! What a deal. I paid $32 for a #10 can of freeze-dried strawberries...

However....the total weight of the freeze-dried strawberries by themselves?

10 oz.

Ya, I'm pretty sure I got took to the freeze-dry cleaners on that one.

 
Canadian Michelle saved my overly sweet icing by suggesting I add tart freeze-dried raspberries

Saved the day. And the iced cake.
