I had to leave out the onions unfortunately due to one guests' restrictions. The sauce was lovely. Was very glad I made it the day before to skim off all the fat. I roasted the carrots for 15 minutes - sauteed the mushrooms - then an hour before they all came I put everything in a low oven and allowed it to gently reheat.
