Cinnamon Muffins Recipe #21597
Muffins are good anytime of the day.

12 muffins
1 1/2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 teaspoon ground allspice
1 egg, beaten
1/2 cup milk
1/3 cup butter, melted
TOPPING
2 tablespoons sugar
1/2 teaspoon ground cinnamon
1/4 cup butter, melted
Mix flour, sugar, baking powder, salt, nutmeg and allspice.
Add egg, milk and butter.
Stir into dry ingredients until moistened.
Spoon into greased or paper-lined muffin cups.
Bake at 400 degrees for 20 minutes or until done.
For topping combine sugar and cinnamon.
Brush top of warm muffin in butter and dip top of muffin into sugar/cinnamon mixture.
My notes: I have made these before and liked this batch even better. It was the topping.
I followed the recipe but I was out of allspice, so I subbed a combination of mace and cloves, and I did add about a half teaspoon of cinnamon to the batter.
The best thing though was adding equal parts brown sugar to white sugar for the topping. The brown sugar just sort of melts in your mouth. I only baked yhem for 15 minutes. Mine didn't rise very much, but I think my baking powder might be old.
These were easy to put together and would be fun to do with kids; let them do the dip in butter and roll in cinnamon sugar part. Yummy breakfast.
