I got this basic oatmeal raisin cookie from the inside of the Quaker Oats container. I added the cranberries and the walnuts. They turned out great. I am always so thankful when something I bake turns out good.

Vanishing Oatmeal Raisin-Cranberry Cookies

1 cup butter, softened

1 cup brown sugar, firmly packed

1/2 cup granulated sugar

2 eggs

1 teaspoon vanilla

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon cinnamon

1/2 teaspoon salt

3 cups quick Quaker Oats or Old-Fashioned Quaker oats, uncooked

1 cup chopped walnuts or pecans

1 cup raisins

1 cup dried cranberries

Heat oven to 350°F.

Beat together margarine and sugars until creamy.

Add eggs and vanilla; beat well.

Add combined flour, baking soda, cinnamon and salt; mix well.

Stir in oats and raisins; mix well.

Drop by rounded tablespoonfuls onto ungreased cookie sheet.

Bake 10 to 12 minutes or until golden brown.

Cool 1 minute on cookie sheet; remove to wire rack.

Makes about 4 dozen.

Bar Cookies: Bake 30 to 35 minutes in ungreased 13x9-inch metal baking pan.

 
I guess we buy the same oatmeal, because I saw this recipe yesterday....>>>>....

when I was making my Blueberry Oatmeal Bars.

I thought it looked pretty good, and I put it
on my to-do list. I'll definitely try these.

 
Would you please post the Blueberry Bar recipe?

I really liked the addition of dried cranberries and walnuts. I have a dried berry medley I might try next time. I also thought about adding coconut and sunflower seeds, but then I started wondering if I would be increasing the dry ingredients too much, and if I would need to add an egg or something, so I didn't.

 
REC: Blueberry Oatmeal Bars

BLUEBERRY OATMEAL BARS

2 cups Frozen Blueberries (use generic
or store-brand frozen blueberries,
NOT name-brand wild blueberries)
2 cups Quick-Cooking Oats
1½ cups Bob’s Red Mill Raw Wheat Germ
3 Tbs. Canola Oil
½ cup Pure Maple Syrup or Honey
¼ cup Firmly Packed Brown Sugar
1 Tbs. Cinnamon

Measure two cups of frozen blueberries,
and let thaw. In a large bowl, mash the
thawed blueberries until they are all
“popped”. (I use a potato masher.)

Pre-heat oven to 350*F.

In a large mixing bowl, combine oats
and wheat germ.

In a medium saucepan, over medium heat,
combine canola oil, maple syrup/honey
and brown sugar and whisk until smooth
and brown sugar is completely melted.
Whisk in cinnamon. Allow to bubble for
about a minute, then turn off the heat.
Add the blueberries and mix well.

Pour the liquid mixture into the dry
mixture and mix well.

Press evenly into a lightly oiled 8x8
square baking pan, and bake at 350*F for
35-40 minutes. Remove from oven and
allow to cool. Cover with a plate and
flip (it should drop right out).

Cut into bar sizes of your choosing.
