My son gave them a 9.8 and hub gave them a 8, which are good numbers considering how picky they both are about desserts.
I had a little problem with the recipe. It says to spread the dough, no way no how. I ended up buttering my hands and pressing the dough in the baking sheet.
I baked it for the time it indicated; took them out and let them cool and tasted them. I found them too cakey, so I popped them back in the oven for another 10 minutes and they got a nice crispy bottom crust.
For the frosting, I didn't have any shortening (Crisco?), so I cut the recipe in half and added about 4 ounces cream cheese and a little sour cream until I got the right consistency. I have problems with frostings.
Anyway, they turned out good and made a boatload of bars with very little effort. I am thinking these might make a good snickerdoodle cookie with a little tinkering. I have been giving them away and I am going to freeze a bunch. I would definitely make these again, especially for a potluck or the holidays.
Sugar Cookie Bars/My Cooking Addiction blog
1 cup butter; room temperature
2 cups sugar
4 eggs
2 tsp vanilla
5 cups flour
1 tsp salt
1/2 tsp baking soda
Cream butter and sugar until fluffy. Add eggs, one at a time, mixing after each egg. Add vanilla & mix well. In a separate bowl combine flour, salt & soda & stir with a whisk to combine. Add to wet mixture and mix just until combined. Spread on a greased baking sheet (use a 13 x 18 pan).
Bake at 375 degrees for 10-15 min, until light golden brown or until a toothpick comes out clean. Cool completely and frost.
Frosting
