I used thighs and chicken legs. I also added seasoning to the flour mixture. The skin came out really crispy. I added thyme, cumin, paprika and garlic salt. The skin came out really crispy for oven fried chicken.

6 drumsticks

* 1/2 cup all-purpose flour

* 1 teaspoon salt

* 1/2 teaspoon paprika

* 1/4 teaspoon pepper

* 6 chicken drumsticks (about 1 1/2 pounds)

* 1/4 cup margarine or butter, melted and cooled

1. Heat the oven to 425 degrees.

2. Mix flour, salt, paprika and pepper in a bowl.

3. Dip chicken drumsticks into margarine; roll in flour mixture to coat.

4. Arrange in an ungreased square pan, 8x8x2 inches.

5. Bake uncovered until juice of chicken is no longer pink when centers of thickest pieces are cut, about 50 minutes.

Made these tonight, very tasty, with some adjustments...I used 5 drumsticks and 4 thighs in a

larger baking dish. The thighs were a little overdone at 50 minutes, but the drumsticks were moist and tender. I think I'll use just drumsticks next time. I added lots of other seasonings, ala Dawn, but I would leave out the cumin next time. The skin was very crispy, but I think the leftovers won't be very crispy tomorrow. This might be a good "oven-fried" recipe for immediate serving, but no leftovers to deal with later on. Overall, a very good "oven-fried" chicken recipe, IMHO.
