I made this Pork Roast and it's shredded and cooled and will be snarfed up tomorrow. what to serve?

the poster didn't give any advice on how this is served. Tortillas? black beans and rice? I'm thinking some baked sweet potatoes would be a nice flavor combination with the pork. I couldn't find any "mojo" sauce, but found a cuban lime/garlic marinade---and then after I made this I remembered Moyn's Mojo marinade and that would have been terrific. haven't made the sauce yet, but will tomorrow night. Boy does that look good Ang! I'm drooling... I think this charred corn salsa

from this recipe that I made might go well with it. I made the whole dish sans the warmed tortillas that I think would be good to scoop up your pork and add the corn salsa. Only thing missing is the pan drippings but you can omit that.

You could also add the squash as they suggest or have roasted squash and zucchini and something as a side.

The charred corn salsa was so good and I also made it with Meryl's blackened chicken.

add some cilantro, sliced onions, maybe avocado, and little papitas, those shoe string potatoes that come in a can, oh wait, I found a link!

I would make tostones and black beans and rice, Green Salad w/ avocado and cilantro viniagrette.

then again, I could use some shoveling help---BYO please. It's dark when I leave in the morning and dark when I get home, so I can't get pictures till I have some daylight this weekend. I have nowhere to push the snow off my deck anymore----my poor doggy has to "swim" through the new fallen snow to get to her "private area". this will be an awful mess when it decides to melt.

I just saw something on the news about the weather in Alaska. They mentioned a

town that began with a "C", and apparently schools announced on Tues that they would be closed all week. They ran out of snow shovels, and had to work with a manufacturer to get special deliveries. It is such a contrast to the warmer weather we have been having on the east coast. Stay warm!
