I made this Slow Cooker Steel Cut oats last night and it is just lovely.

I cut the recipe in half and finally used the 1.5 quart small crock pot I got around Christmastime. It worked perfectly---not too dry and I'll be making it again and again. My co-worker lowered her cholesteral so much that her doctor has asked her to add some meat etc back into her diet. she has been eating oatmeal every day for 4 months, including a substitute for her daily white rice(she's Philipino), and cut out all meat/poultry. she also swears by cilantro.

Slow Cooker, Apple Cinnamon Steel-Cut Oatmeal

2 apples, peeled, cored, cut into 1/2-inch pieces (2-1/2 to 3 cups chopped)(I added 1/4 cup of dried cranberries too)

1-1/2 cups fat-free milk

1-1/2 cups water

1 cup uncooked steel-cut oats

2 tablespoons brown sugar

1-1/2 tablespoons butter, cut into 5-6 pieces (optional)

1/2 teaspoon cinnamon

1 tablespoon ground flax seed

1/4 teaspoon salt

Optional garnishes: chopped nuts, raisins, maple syrup, additional milk or butter

Directions

Coat inside of 3-1/2 quart (or larger) slow cooker with cooking spray. Add all ingredients (except optional toppings) to slow cooker. Stir, cover, and cook on low for 7 hours. Spoon oatmeal into bowls; add optional toppings, if desired. Store leftovers in refrigerator. Freezes well.

To reheat single servings: Put 1-cup cooked oatmeal in microwave proof bowl. Add 1/3 cup fat-free milk. Microwave on high for 1 minute; stir. Continue cooking for another minute, or until hot.

Recipe can be doubled in 6-quart or larger slow cooker. Increase cooking time 1 hour.

how he messed with the mashed potatoes over Thanksgiving by not heating them and yet scored extra points by burning me instead.

Then the Donvier ice cream maker jumped in and shared how he ruined a picnic by not freezing the ice cream properly.

The tortilla press just chuckled and said he messed up a Mexican dinner I had totally planned around fresh tortillas.

Ya...good times.

 
my kitchen toys just groan from neglect---perhaps the earthquake the other day was just

my bread machine and her gang staging a riot. we actually did have a 3.9er 2 days ago and my bed was a rockin'---and not in a good way. I was a few seconds away from running outside. Be sure to use Steel cut in this recipe. I let mine cook for 8 hours on low. if your cooker cooks hotter, perhaps put it on a timer to start after midnight or it might get too dry. mine was perfect---a bit crusty on the sides but stirred up, it was plenty creamy and still a bit "toothy". I totally forgot to top it with some nuts. nuts. that would have been sublime. I have tried the baked oatmeal recipes, but I find them too dry.

 
OMG Mar! : ) Maybe your ice cream maker can let me know where the paddle is for mine. dh wonders

why I still keep the bowl in the freezer... I keep suggesting that maybe the paddle will find it's way back to the kitchen! It may see the "Lost" signs and suddenly make its way home!
