I made this tonight using up a Knorr Spring Vegetable packet that I bought by mistake. My family loved it. Hub said it was excellent. It's kind of disheartening when they love something so much that uses a soup packet. It was good and it was very easy.

Country French Chicken Recipe #65777

This recipe came to me from a friend of my daughter's. It's quite easy and fast, yet very tasty. Especially good with rice.

SERVES 4

2 tablespoons butter or margarine

1 1/2 lbs boneless skinless chicken breasts

2 cups water

1 package Knorr vegetable soup mix

1 slice lemon

1/2 cup sour cream

1 tablespoon cornstarch

1/2 teaspoon dry dill weed

In a large skillet, melt butter over medium high heat.

Add chicken and saute for 5 minutes.

Stir in water, soup mix and lemon.

Bring to a boil.

Reduce heat to low.

Cover and simmer 15 minutes.

Remove chicken and discard lemon.

In small bowl, combine sour cream, corn starch and dill weed.

Add to skillet, stirring constantly.

Bring to a boil over medium high heat.

Reduce heat, simmer 1 minute.

Serve over chicken.

Sounds delicious, IMO, soup packets are great as long as you use them for something other than soup

 
Thanks for posting, Dawn. This looks like dinner tonight. I have all the

ingredients and it doesn't look like I'm going anywhere today (snow). I can find something to substitute for the vegetable soup mix. I'm sure we've got something up there in the spice shelf.

Hey, maybe even that bag of mixed vegetables that I keep pushing to the back of the freezer. :eek:)

 
does anyone else have trouble finding this Knorr Veggie soup mix? I use it for dips too, and it's

hit or miss finding it. I buy it up when I do find it. Our super walmart now carries it.

 
That's how I ended up with this soup packet.

I was trying to pick up the vegetable one for my stepdaughter because she likes to make that spinach dip on the packet. I saw this one and bought it, but the zuchinni put her off, so I kept it. I think around holidays and things like the Superbowl, people like to make this dip and then they become scarce.
