I made this yesterday, and if anyone is still thinking about an easy Easter brunch...

Breakfast Strata

In a crockpot, place 2 cups cubed (frozen) potatoes, 1 T onion powder, a couple of handfuls of cubed bread, chopped ham or browned sausage (optional), 1/2 cup of shredded cheese, and 6 eggs whisked into a 1/2 cup of milk. Top with salt and pepper, and a little tarragon.

Set on high for 4 hours or low for about 7 hours and when the eggs have puffed up and are slightly brown, it's done. We had it for supper.

 
I'm always looking for easy brunch recipes. People seem to accumulate

as soon as we set out foot in our vacation home, so easy dishes for a crowd is always welcome. thanks for sharing smileys/smile.gif
