but this salad is *excellent*, especially over baby spinach.

Ultra-easy, too (unless you count peeling the beets after roasting):

-wrap beets in foil and roast for 45 min.

-open a jar of feta cubes in herbed olive oil

-peel beets, chop

-mix beets and feta together; drizzle olive oil over

-toss some salt and pepper in and mix again

Very tasty; the combination of sweet and sour is great. Yum!

Anyone have a favorite? I could eat this for breakfast (if I didn't have to breathe on people, afterwards)!
