I love this - it is so simple, creamy and delicious. I don't cool it, - we eat it warm, topped with whipped cream.

Creamy Chocolate Pudding

About This Recipe

"This pudding is very easy and delicious and I've made it many times. The best part is it's rich and creamy and tastes fattening, but it's LOWFAT!!!"

Ingredients

5 tablespoons Dutch-processed cocoa powder

1/4 cup cornstarch

1/2 cup sugar, plus

2 tablespoons sugar

1 pinch salt

1/2 teaspoon instant espresso ( if not available, can use instant coffee)

2 cups low-fat milk ( can use regular milk, if desired)

1 teaspoon vanilla extract

Directions

Sift all dry ingredients together in a bowl and mix until combined.

Place mixture in a medium saucepan.

Stir in just enough milk to create a smooth paste. (I use a wire whisk).

Gradually mix in remaining milk.

Cook over medium heat and stir slowly and constantly until mixture thickens and starts to boil. Let it boil another 30 seconds or so, gently stirring constantly.

Remove from the heat and gently stir in vanilla.

Pour pudding into 3 or 4 dessert dishes and chill until set, about 4 hours.

This reminds me of Deb in MI's pudding which I love because the math is SO easy to remember:

1 Part: cocoa, corn starch, sugar, milk
to
2 Parts good chocolate (I don't like chips for this...quality tells)

So, for example

1 TBL cocoa
1 TBL corn starch
1 TBL sugar
1 C Milk
2 oz Milk or Semi-sweet chocolate

Mix dry ingredients, add milk and cook until bubbly (cook 1 minute at least). Take off heat and stir in chocolate. Serve warm or cold. Reheats well.

4 oz Milk or Semi-sweet chocolate

3 TBL cocoa
3 TBL corn starch
3 TBL sugar
3 C milk
6 oz Milk or Semi-sweet chocolate

4 TBL sugar (1/4 C)
4 C milk
8 oz Milk or Semi-sweet chocolate
