I need inspiration... cooking chicken thighs in the crockpot with nothing but...

cream of celery soup in there with 'em. Any ideas - I am kind of sick of my Chinese, 5-spice, soy/peanut butter recipe - my "default" recipe.

I have refried beans, avocados, corn/cornbread, and enchilada sauce I am kind of in the mood for. But can I do something with it once the chicken is done (I"m not home right now)? Ideas anyone? TIA

I see that the 5-ingred chicken is baked too. Looks good though, and we love curry, so maybe next time.

I'm thinking fajitas or flautas... but not really sure how it would be put together with already-cooked chicken and not too much time after I get home.

 
Couldn't you add maybe some chipotle chili powder or chipotles in adobo and

some salsa for the last 1/2 hour of cooking?

 
I'd take the chick off the bone when you get home. Make a roux using some

chili powder, garlic etc. Toss the soup. Saute some onions. Then add corn, cilantro, onions, and canned poblano peppers etc. to the roux. Dump it all in together and do a corn bread top & serve with cilantro and sour cream.

 
Or some sour cream and canned chilis and cilantro and serve on rice.

or roll in tortillas and add jack cheese and green onions for white chicken sour cream enchiladas

 
Thanks - I did a compilation of the suggestions you all made...

and it came out great! Fast!

I added enchilada sauce, onions, cilantro, and a few hot pepper flakes to the chicken (which I took off the bone). Then rolled it in a wrap and topped it with cheese and sour cream. It was great! Refried beans on the side.

P.S. Great basil-tomato wraps (Tortilla Factory brand) from Walmart - 12 grams of fiber per wrap!! And so good - soft, tastey, stay fresh a long time.
