I need lunch packing advise please. I haven't had to do this in a very

long time. I have made a "mock" egg salad out of firm tofu that I will put in a pita half and I wonder if making it the night before will make the pita soggy? The tofu is very dry, it's just like boiled egg, and just has a small amount of Mayo in it. Think it will be ok doing it the evening before? TIA

 
Can you pack them separately? Put the "egg" salad in a ziploc and build it

right before eating? I always hate what refrigeration does to the texture of bread, even if the salad does not make it soggy.

 
I would think the moisture would definately make the bread soggy. Maybe you

could "line" it with a little butter, if you really have to make it the night before. But then again I guess that would defeat the purpose of the healthy tofu - sigh!

 
Whenever I have to do this, I make sure the lettuce layers are protectinon from the soggy stuff.

 
That's what I've been doing. This is for hubby who is an

airplane engine inspector and has just taken a new job. I'm just trying to make it easier on him in his surroundings. He said the pita split so he just ate the chicken salad and the pita on the side. He's fine with it. He's very easy. They do have a Micro so I told him to zap the pita for a few seconds to make it more pliable. Thanks

 
Yes Dawn, that does throw off the new healthy, no salt, new life we have. Am I having fun yet? ;0)

 
I thought about that Marg and wondered if it would do the trick. I'll do that on one

for me and then if it gets yucky I can just get another pita.

 
So while we're at it and I have the undivided attention of the smartest,

most creative cooks around...Mangos are plentiful and cheap right now. I picked up 3 for a $1.00 and I'll dice some into a chicken salad for a pita. He loves a spicy mango salsa with a grilled chicken patty or breast. How do I use the salsa for a brown bag lunch. Any ideas?

 
Orchid, definitely pack it separately.

I've made the tofu salad before and it separates after a night in the fridge, quite a lot. You'll probably need to give it a stir before putting it in the pita.

mixed all together and served in a pita. packed separately though.

 
some thoughts on lunch packing and prep time savings

I take my lunch everyday and I've solved this problem by purchasing water-tight containers in every size from a couple tablespoons, up to entree size. Everything goes into these containers to be packed into my lunchbag and I combine as necessary when I eat lunch. May not work for your husband, but it was a real event for me. I usually pack the containers after dinner and put them in the fridge for the morning.

Another amazing time-saver that I can't believe took me so long to start doing:

I never buy pre-washed salads and vegetables because of the demonstrated risk to health and the possibility of death they have repeatedly shown. So my veggie and salad prep took a lot of time since I only buy produce in it's unprocessed form.

Now, when I get back from the market, I set out all my veggies, wash them, then start cutting them up. I have very large containers that I fill up with similar items. One bin will have cut up cauliflower, broccoli, carrots, and celery. Another will have washed and dried lettuces. Another will have bell peppers, asparagus, mushrooms, etc.

Then, when I'm putting lunches together, all I have to do is open the containers and transfer servings to smaller containers, instead of standing in the kitchen washing, coring, cutting, etc. I now eat lots more crudites for lunch and snacks during the day.

The other amazing thing this storage method does, is that when I get home from work to start dinner, ALL OF MY VEGGIES AND SALADS ARE PREPPED!!!!

I can't believe what a time saver this has become for me. Now I don't have 30 minutes of veggie prep time and have seriously cut down the time it takes me to make dinner.
