I need some ideas for a mostly do ahead dinner for 8. They are having Italian the night.....

I often serve beef tenderloin, because even though it is expensive you can put it in the oven when your gests arrive; roasted tomato and basil soup; chicken cacciatore, chicken enchiladas.
