make. We have a neighbor from there and would love to make a dinner for him and his family plus friends in the neighborhood. Please all ideas I would love.

Hawaiian Fruit Platter

Not sure how authentic this is, but it sounds good.

HAWAIIAN FRUIT PLATTER

INGREDIENTS:

3 fresh pineapple slices (unpeeled) -- cut in 8 wedges
2 kiwi fruit -- peeled & sliced
2 medium oranges, unpeeled, sliced -- halved
1 papaya, peeled, seeded, cut in wedges
1 star fruit -- sliced
1/2 pound red grapes, broken into small clusters
1 banana, peeled, sliced *(See note below)
2 Tablespoons fresh lime juice
1/2 cup frozen pineapple juice concentrate -- thawed
1/4 cup coconut

*(Best to slice bananas just before serving).

DIRECTIONS:

1. On large serving platter, arrange pineapple, kiwi fruit, oranges, papaya, star fruit and grapes.
2. Toss banana slices with lime juice. Drain, reserving lime juice. Arrange bananas over fruit on platter.
3. In a small bowl, combine reserved lime juice and pineapple juice concentrate; blend well. Drizzle over fruit. Sprinkle with coconut.

Makes 10 servings.

Here is a favorite in the islands REC Huli Huli Chicken

Huli Huli means to turn so turn often as the chicken cooks- better on the grill than in the oven


HULI HULI CHICKEN

3 chicken fryers, halved or quartered
1/4 cup each catsup, shoyu and frozen pineapple juice concentrate
1/2 cup each chicken broth, fresh lime juice and brown sugar
1/3 cup sherry (medium to sweet)
1 tbsp fresh ginger, crushed and 1 tbsp Worcestershire
Hawaiian sea salt and pepper to taste
Mix sauce ingredients in bowl. Thread chicken onto rotisserie spit. "Paint" the sauce over cleaned chicken pieces, then sprinkle with salt and pepper. Grill on rotisserie, turning and basting frequently with sauce until done, 45-60 minutes. In the oven, roast at 325 degrees for about 90 minutes. Serves 6.

 
Make this for him- he'll go nuts- REC Oven Kalua Pig

this is a STAPLE in the Hawaiian diet- and it is sooooooo good. It is usually cooked in a pit (Imu) in the ground but you can make a pretty good version in your oven. Go to a florist and get Ti leaves. Take the spine out so you can wrap the meat in the leaves. If you cannot find Ti leaves, use spinach but you won't get the same flavor- fresh banana leaves would work if you can get them.


OVEN KALUA PIG

4-5 lb. pork butt
2 Tbsp Hawaiian salt
4 cloves garlic, chopped
3 Tbsp liquid smoke
6 Ti leaves

Preheat oven to 500º. Rub salt and liquid smoke over pork. Sprinkle garlic on top. Wrap pork in leaves then in heavy foil. Bake in a covered pan for 30 minutes. Reduce the heat to 325º and bake for another 3-1/2 hours. Shred the pork and serve with its juice.

Sounds great getting ideas I think rice would be good with all the dishes

Would still like to see some sides and anything esle that might surprise him and his wife plus my neighbors. Some of the stories we get to hear are funny and wonderful. They are in there 70's

Oh yes, rice for certain. Macaroni salad too if you really want to be local-style

Macaroni salad is like potato salad with macaroni in it. Scooped with an ice cream scoop. Good stuff, actually. Universally loved in Hawaii. Another universally-loved item is good corn bread.

Lomi Lomi Salmon is a wonderful Hawaiian dish. He'd really love having this:

2 lb salt salmon (salmon + Hawaiian salt)
8 large firm tomatoes
4 large green onions with stalks

Soak salmon in salt water at least 6 hrs or overnight. Remove skin, bone it and cut into small pieces. Dice tomatoes, slice green onions. Mix together mashing tomatoes as you mix. Refrigerate until serving time.

Another idea- and this is not so traditional in Hawaiian cooking but it is totally delicious and he'd love it:

Gingered Papayas

4 firm ripe papayas
8 T butter
4 T lime juice
1 tsp grated fresh ginger or ground dry ginger
8 thin slices lime
dash of cayenne

Cut papayas in half lengthwise and scoop out seeds. Arrange in baking dish with 1/8" warm water in bottom. In each papaya cavity place 1 T butter, 1/2 T lime juice and 1/8 tsp ginger. Bake at 350 for 30 min, basting 10 min before done. Place a slice of lime at edge of each papaya half. Add a dash of cayenne and serve warm.

 
Cathy, a local restaurant here called Back in Lahaina serves a macaroni salad TDF

I've tried to pick out the flavors but I just can't. The dressing is very creamy, almost like you get when you puree the yolks for egg salad, and a bit of bite from ((maybe)) horseradish? Do you have a recipe like that, or know what it might be?

Yes- can be a couple things, Cheezz

Hard boiled egg yolks, mayo and mustard- probably either dried hot Chinese mustard or Wasabi.

 
Other things to consider

Fried eggplant, sweet potato casserole

You could really get silly and put cubes of Spam in the macaroni salad. Many do.

Whatever you serve your friend, I'm sure he will really appreciate your thoughtfulness.
