I seem to remember a post about freezing sweet corn polenta

and I can't find it now.

Any ideas?

I have a pot full and I would love to save some for a cold winter night!

 
I put half of the sweet corn polenta into the freezer

for future enjoyment.
The other half will be part of dinner tomorrow night.

With our local corn season coming to a close, I felt the need to get this made now.

 
That looks like what I call cow corn!

Around here, sweet corn is planted with more space between plants and rows. The corn grown for silage is the stuff that we can't see through!

 
And we call it "horse corn" which is for feed not "food" as you say.. When I find corn in the

supermarket that is big kernelled and not really fresh/good, I call it that too! LOL

 
Our daughter, who works on a large farm with a big herd of milk cows

calls that odorific ambiance "Dairy-air"!
