I made it a few weeks ago, but I don't think I've forgotten anything. Of course, it has no name. All measurements are approximate but the proportions don't really matter too much.
I got the idea when I was watching someone get frustrated over boring breakfasts.
for 2
1 fresh chorizo sausage, diced (I used mild)
1 small potato, peeled, partially cooked
1/2 sweet potato, peeled, partially cooked
1/4 c. finely diced red pepper
2 T. chopped cilantro
1/4 c. shredded nacho cheese (jack, cheddar, mozzarella)
Hollandaise sauce, simple blender recipe with adobo sauce
2 Poached eggs
Over med-low heat, saute sausage for a minute to render some fat, before adding potatoes. Continue to cook for 2-3 minutes. Add pepper and continue to saute until all ingredients are cooked. Add cilantro, cook 1 more minute. Add cheese and stir to melt and bind ingredients.
Divide mixture between 2 stackers, each about 2 1/2 -3" in diameter, pressing to make a firm base. Remove the stackers and top with poached egg and Hollandaise.
