I spent my lunch today reading cake recipes from a site Gay posted

Barbara, There are many choices, it can be confusing, I am linking an article on baking with olive

oil and then I will link a company that I like for vinegar and I would think that there light variety of olive oil may work. This is a great website also. You will find many recipes for olive oil baked goods.
