I steamed eggs and one of them broke open, has it happened to anyone else? I am wondering why it

I have had an egg crack during steaming a couple times.

Most recently, the yolk was very off-center, right near where the shell was gaping open. I don't know if this was related to the shell breaking. I didn't worry too much about it, just ate the broken one first.

 
My guess is that the egg had a micro-crack on the shell...

..... that was barely noticeable, and did not compromise its structure while at room temp or fridge

once you heated it up, it simply broke at that point

It never happened to me - I must have steamed over 50 eggs by now smileys/wink.gif

 
I make boiled eggs frequently, and have found over the past few years

the egg shells seem to be thinner. I get cracks frequently, even the few times I've steamed them.

 
I just read an interesting tip for steaming hard boiled eggs in baking cups -pressure cooker

she put the eggs in her silicone baking cups, then in the steamer basket. no ruptures!
This was a pressure cooker method, but I would think it would work in a pot.

 
So have I, I also have found more cracked eggs in the cartons from the store. Not so much

buying from the Farmer's Market. Between January and April, it is harder to find local eggs...many don't want the expense of keeping chickens warm and they will not lay when too cold..

We used to have a huge ranch here that had a lot of chickens laying eggs but the feral dogs made the egg business very expensive for them, so they sold all the chickens.

 
That happened to me once. I figured the thin-shelled eggs we get need to be room temp.

I place the eggs in a bowl of warm water if they are right from the fridge. Have not had any crack since.
