Found a gingerbread cake on Brown Eyed Baker and I'm looking for something chocolate that I can make the day before. Can I make a Swiss cake roll ahead or does it have to be the same day?

Please offer a suggestion on something else that you don't have to fuss with!

 
Both sound great but I was looking for something to serve at least 12. The last time I made dessert

for an event instead of choosing one dessert many of them took a piece of each!!

 
IMHO, a chocolate roll is best served the day it is made, BUT it'll still be fine a day later.

 
Does it have to be a cake?

Stupidly simple ideas that people love and it looks like you went all out.

Pumpkin or Key Lime dip in a bowl on a platter surronded by store bought vanilla wafers. Both are very good.

Peppermint Bark Cookies;

1 box of old fashioned chocolate wafer cookies
melted white chocolate
crushed candy canes

Dip a corner of a wafer in white chocolate, sprinkle with crushed peppermint. They're delicious, look stunning on a platter, and you do it from start to finish in 15 minutes.

Another huge cheat that looks like you've really outdone yourself:

Ritz crackers
peanut, almond, cashew, or cookie butter
melted chocolate (stir in some crisco or parrafin so it doesn't bloom after dipping if you're not into tempering)

Make sandwiches with the crackers and butter. Dip in chocolate, place on sheets of waxed paper to set.

 
Oh, I made this. I think it was William's (as in Prince) groom's cake. Very good. Madly sweet.

Use a good chocolate if you do this.

 
One more suggestion- chocolate cheesecake. Easily serves 12 and easy

 
I would love to just buy them but the dinner is Monday, I live in the boonies,

and it's 120 miles round trip to where I could find them.

And YOU are not lazy!!!

 
Brownie trifle: brownies layered with chocolate mousse/whipped cream

Looks impressive, but super easy to make. To Guild the lily serve with salted caramel and chocolate sauces on the side. Garnish top with shaved chocolate.

 
How about the Chocolate Cake that Erin in NY recently posted. Can be made days ahead, easy,

rich (so you'll easily get 12 slices if you cut them on the smaller side). Looks like a winner to me.

You could gussy it up with a Christmas spin if you wanted to. For instance, I could see maybe doing a light sprinkle of crushed candy canes on the plate around the cake or on top of a whipped cream dollop. Or plate with a red sauce -- like a raspberry coulis.
