I think Randi's Roasted Olives with Lavender should be in T&T. Anyone agree?

Did you concern yourself with the "culinary" quality of the lavender flowers? I'd like to just pick

what will be out in a few weeks from my plants. I suppose they would be culinary enough since they are untreated.

 
Good point. The stuff for potpouri might have preservatives. I used "culinary grade" lavender from

sfherb.com. Pensey's also has it. Before that I used herbs de provence that contained lavender, picking through it to get as much lavender as possible.

I'm sure yours from the garden will be even better.

 
I've heard that you want to use English lavender, not French. The French kind has the "butterfly"

shaped flowers.

Yes! I served them this weekend, at the start of a

six-hour-long lunch, along with the Roasted Olives with Lemon and Fennel (also Randi's), homemade grissini, and sweet butter from France. Great start, and lots of yums expressed about both olives.

BTW, I doubled the amount of lavender. This time of year, with allergies, I can't smell that well, so I can't taste that well, so I have to oomph-up all the flavourings to satisfy myself, which in turn seems to satisfy all my guests.

 
Me too! I got some in June when I was in Penzey's in St. Louis. Joe's fault, lol. He has posted

recipes using it, well at least one, the chicken. It does have lavender in it.
