This recipe is from Joann Lindauer, who adapted it from Microwave Gourmet by Barbara Kafka. She claims this is easy, fast and no fail.

1/4# unsalted butter, cut up

1/2 c granulated sugar

4 tbsp fresh lemon juice

grated zest of 1 lemon

3 eggs.

in a 4 c. glass measure place butter, sugar, juice and zest. Cover with micro-safe plastic wrap, ventine one corner.

Micro on high 4 mins. Remove from oven. Uncover and stir well.

Whisk 1/4 c of lemon mixture into the eggs to warm them, whisking constantly. Pour egg mixture back into the remaining lemon mixture.

Micro, uncovered on high 2 minutes. Remove from oven and whisk until smooth.

Micro on high 2 minutes. Remove from oven and immediately pour into the workbowl of a food processor.

Process for 30 seconds until smooth.

Cool before serving.

Makes 1 cup.

 
The recipe sounds great but I am curious about only using the microwave once a year...

I do not use mine for real cooking but I use it everyday....

cooking oatmeal
warming tea
heating leftovers
thawing
heating the dogs food
boiling water (until we got the instant hot water)
melting butter
making chocolate pudding for grandkids
melting chocolate
making popcorn
cooking corn on the cob (the very best way to cook corn)
Just a few I can think of right now.

I would say, heating leftovers is my #1 use. Do you not do any of the above in yours?

 
Last time I used microwave part of our toaster oven/microwave I turned it into a flame thrower

I think I was melting chocolate. I vaporized a cinnamon roll at work, the remnants fell onto the floor and melted the linoleum.

For the above reasons and at the request of those near and dear to me, other than Judy's pumpkin butter, I stay far far away from it.

 
Goodness, I don't know about the toaster oven/micro. Ours is a small micro mounted shoulder height

among my pantry pull out cabinets in my kitchen. It is so handy.

 
Several reasons...I've found warming or reheating, liquids just don't stay as hot or warm as

from the stove. Things cool down quicker.

Now I have a new stove and I really enjoy it.

I don't use bagged popcorn.

My chocolate pudding is faster in the food processor made with avocado, cocoa and maple syrup...everytime I serve it to guests, they take home the recipe...

Yesterday I tried making a microwave creamy rice pudding from a recipe clipping. I ended up throwing it out, it never cooked. I'm not sure if it was the Sucanat I used rather than white sugar or brown short grain rice rather than white.

My lifestyle isn't that I need to thaw things quickly so I don't use a microwave for that either.

I may try the lemon curd...smileys/smile.gif

 
I'm with Karen on this. I don't try to "cook" meals in it (except for veggies) It's great for corn

since you do away with those pots of boiling water in the heat of summer. five minutes or so start to finish Then take it out and hold it over the gas burner and roast it. Voila! grilled corn without the fuss and mess! Oh, all right, you don't HAVE to grill it.

Here's the winner....

EZ Pudding

1 c pure maple syrup
2 medium avocados
1/2 cocoa powder (I use Rapunzel's unsweetened)

Throw the ingredients into a food processor, blend well. Stop to scrape the sides down to be sure all the ingredients are thoroughly mixed.

Blend until fluffy. This fudge pudding is to die for. Everyone I've served it to takes one bite, stops and exclaims, what's in this, or I have to have this recipe, etc. It's wonderful! Couldn't be easier!

I've made it a day ahead, kept it cold in the fridge, I've served right out of the food processor too.

reminds me of cat-sitting for some friends and the instructions said to heat food for exactly 11 sec

seconds in the microwave. Welllllll, surprise surprise, but those cats liked their food straight out of the can just as well. heeheehee.
