I used some leftover chicken (from the cassoulet) to make this: Peanut Chicken

You could use any shredded chicken though. It was really good.

2 cups cooked chicken

2 Tbs peanut butter

3 Tbs yogurt

1/2 cup chicken broth

leftover sweet potato chunks*

small onion, diced

2 tsp cider vinegar

red pepper to taste

black pepper to taste

Combine peanut butter and yogurt and simmer; add broth. Stir until smooth and add rest of ingreients. Cover and cook until chicken is heated through, about 15-20 minutes.

Serve over rice.

*If using uncooked sweet potato, I have "hurried it along" by adding a little water, covering it, and steaming it in the microwave for about 5 minutes.
