I want a square cake. My recipe is for a 9" round pan, should I use an 8"

Barb, double the recipe & you can use a cookie sheet...

Then cut two square layers from it for a layered cake.

SaraBeth Levine does that. She can get a 3-layer 8" cake out of one 12" x 18" sheet pan of batter. Two layers are full circles and the third layer is two semi-circles put together. With icing, she claims no one ever knows the difference. And she doesn't have to torte the top to even the layers.

 
Use an 8" square. I'm always happy to find a use for the geometry I had to learn.

The area of a 9" circle is 63.6 square inches. The area of an 8" square is 64 square inches--almost an exact match. (Assuming the heights are about the same the pans should hold the same amount.)

 
I like how you can use calculus to determine how long a turkey will

reach a certain internal temperature. That's about the only use I've ever found for it ;o)
