I want to make these chicken meatballs but pork is at a pretty good

Not the plain ol' fatty pork that is available as simply "Ground Pork" in the meat cases here

There is the lean stuff that comes from a local meatpacker, Farmer John, and the fatty stuff--more for home-made sausage patties and stuffings.

 
I may be very lucky but our ground pork is quite "lean"--very little renders out comparatively. Just

my experience in the supermarkets here.
