I was immediantly drawn to the Sweet Potato Salad in this months

Food Networks Magazine from Trisha Yearwood so I made it this morning. Wow, it's good and no I have never heard of Sweet Potato Salad. Please remember I was raised in the Southwest. I have never thought of using sweet potatoes but I'll sure be making it again. It is good. I make one that might jibe with your southwestern roots.

To her salad, add some black beans, red bell pepper (I think she already does), even a little corn, use lime juice in place of the vinegar, add a bit of cumin, and sprinkle with cilantro. Be stingy with the dressing. Of course, some bacon couldn't hurt either!! LOL
