Keep us posted on your menus. Could you "become known"
for a particular soup combo say, on Friday? Or do you want to keep changing it up, which is also fun and creative, of course.
Two days is SO much more manageable and will keep it fun for you to do. Congrats.
What city? We may drive to Denver and you could be "on the way".

I love Charley's idea of a soup combo...
maybe with a sandwich match? For the most part, soups can be very easy and seasonal too. I'm in love with The New England Soup Factory cookbook, which has excellent recipes. Soup, salads, and sandwiches are also included, and every recipe I have made is wonderful. The ideas must be keeping you awake at night.

I think that even a very tough job can be faced if it's two days per week, you have enough time to recover, and also get ready to plan what you want to do in the weeks to come

Dawn, have you heard of pop up dinners? They're very popular here. It's something y
might consider going forward. A series of one night only dinners. It satisfies your desire to cook and try new things, but might also give a sexy exclusivity feel to the patrons to dine after hours. The idea is so popular here, there's even an app to track and register for pop up dinners (both as a guest and a payment vehicle for folks who do are the host.) Often times they're in restaurants that are typically closed on say...a Monday night. Just a thought.
