I've always used a steel-would take to a pro once every year or so- /a lot of folks have been raving about the Chef's Choice brand of sharpeners- Tuesday morining had the Waring Pro KS80 on sale and I bought it- Anyone have any experience with thisone or any others? recommends or complaints?.....I can still take mine back.....

Thanks

DH loves the Chef's Choice, he has the 120 and recently replaced it with the 130. They are very

similar, but the 130 has three stages. The first stage is a sharpening stage which should be used sparingly, the second and third stages are used to either hone or steel the blade. You can use one or the other. Those stages can be used regularly. The 130 got highest ratings from both Cook's Illustrated and Fine Cooking magazines. He wasn't happy with the 110, he felt it removed too much blade. He thinks the 120 is also a good choice, it just doesn't have the steeling option. Okay, that's just his two cents worth. We've never used the Waring.
