Spinach Salad With Honey Mustard Poppy Seed Dressing

Amount Measure Ingredient -- Preparation Method

1 pint fresh spinach -- coarsely torn
1 cup Mayonnaise
1 tablespoon poppy seeds
2 tablespoons Dijon mustard
1/4 cup yellow mustard
2 tablespoons honey
1/4 teaspoon fresh tarragon -- chopped
1/4 lemon
1 1/2 drops red wine vinegar
1 1/2 drops salt -- to taste
1 1/2 drops black pepper -- to taste

Preparing the Dressing:
Place the mayonnaise in a mixing bowl and stir in the 2 types of mustard, 1/2 to 1 cup honey (adjust to your taste), tarragon, dash red wine vinegar, juice of one lemon, poppy seed, and salt/pepper to taste. Stir until thoroughly blended.

Serve over a bed of torn spinach.

SUGGESTED GARNISHES:
Crumbled, cooked bacon
Crumbled hard boiled eggs
Sections of Mandarin oranges
Bean sprouts

 
Dawn - I couldn't get your link to work.

I ended up, based on the ingredient list that Orchid provided, making kind of a hybrid. I never would have thought to add mayonnaise to the dressing - so I mixed that with regular mustard, honey, canola oil, and some seasonings. For a last minute concoction - it was darn good! Thank to both of you for reply!
