If anyone is around, I need ideas for using leftover fresh salmon, about 1 lb - I want to avoid

recipes with lots of cream, and I don't want to make patties or a cold salad. Any ideas?

*NOTE: The salmon is already cooked.

 
Rec: Roasted Salmon with Smoked Paprika Glaze. Meryl, I've made this several times and just love it

I halve the recipe and the cooking time of 18 minutes has been pretty consistent. I use kosher salt and add just enough of the evoo and lemon juice to make a fairly thick glaze. I glaze once or twice while the fish cooks. That reserved sauce is a must!

It's very easy to make too.

Hrrrrrrmmmph! Well, now.... (LOL) How about just making a quarter of the sauce to top on your gently

reheated salmon? I have reheated this recipe for leftovers the next day with no problem - sauce and all.

 
I may just do that, or better yet, try the recipe from scratch in the future. Thanks!

 
salmon tacos. salmon crepes, salmon with garlic butter crumb pasta. sounding a bit like

bubba gump here smileys/smile.gif salmon quiche. salmon pot pie. just plain cold salmon with a nice cucumber dill salad and baked sweet potato.

some thinly sliced white or red onion; toasted capers; lemony or red wine vinaigrette with a bit of lettuce?

Mmm, yes! Garlic butter crumb pasta, yum!

We often have leftover salmon, and I usually just reheat it for DH and eat it cold myself with a yogurt/mustard/dill sauce, but this sounds yummy!

I like salmon fishcakes, myself.
