If I make this cake into cupcakes, how many do you think it will make?

You can use almost any cake recipe to make cupcakes. Generally, any cake recipe that yields two 8- or 9-inch layers will make twenty-four 2 ¾ x 1 ¾ cupcakes.
If you are converting a Bundt or pound cake recipe, just divide the pan’s volume by ½ cup—the amount of batter needed for each cupcake. For instance, a medium-size Bundt pan holds 9 cups of batter, which means you should get 18 cupcakes from that recipe.
Bake cupcakes at the same temperature required for your cake recipe.

 
I looked at the flour/sugar/fat ratio and this is closer to the Silver Palate carrot cake...

which fails for most people because the recipe says to use 9" pans, but the ORIGINAL recipe says to use 9" pans with 3" HIGH sides. So there is always too much batter for standard size pans. I now use 3 8" standard pans for that recipe and have no problem.

I always get 36 cupcakes out of the carrot cake recipe which has 3 cups of flour, 3 cups of sugar and 1 cup of fat.

I would plan on more than 24 and I would be careful about using a standard 9" x 1" HIGH cake pan.
