If I need 6 Dried New Mexico Red Chile Peppers, and I need to rehydrate them,

HEY MANZ??? Well, I'm going to use 1tsp per NM Red pepper...and 1/4 tsp per cayenne

I guess we'll know when Manz checks in! LOL

 
Just from my own experience and no scientific method or algorithms used, I would say

that 6 chiles soaked and rehydrated would yield about 1/4-1/3 cup puree. Dried chiles are very concentrated so I would use a lot less powdered, maybe 2T?

does that jive with your thinking?

Too late, but you could have gone to the store and seen what 6 dried peppers weigh.

then used that weight of chile powder.

But then I guess you were trying to save a trip to the store.

 
Now why didn't I think of that? According to Rick Bayless's site, dried NM chiles weigh about

1/3 oz, so that would be two ounces or 1/2 cup as my 1/2 cup jars of cayenne, etc from Penzeys are 2-2.5 oz. That's a lot of chile powder. Am I figuring this right? My aged brain is swimming.

I know I get more than a teaspoon from pulverizing a small chipotle. I used to have a chart of chile powder/peppers equivalents but have misplaced it. I keep the dried ones on hand now, buried in the bottom back of the freezer.
