If you ccouldn't use olive oil, what would you use instead?

Since the olive oil adds flavor to the dressing, I'd either go with a neutral oil

as Steve suggested, or consider a nut oil to add some flavor.

As for baking with olive oil, again it would make a difference on the flavor profile of the item for which oil to sub. I'm thinking you can't go too far wrong with the neutral canola or grape seed.
