Auntie Anne's Pretzels

1 1/2 cups warm water
1 1/8 tsp. active dry yeast
2 Tbs. brown sugar
1 1/8 tsp. salt
4 cups flour
2 cups warm water
2 Tbs. baking soda
4 Tbs. butter, melted
1/2 cup sugar mixed with 1 tsp. cinnamon or coarse salt or garlic butter

Sprinkle yeast in warm water in mixing bowl. Stir to dissolve. Add sugar and stir to dissolve. Add flour and salt and knead dough until smooth and elastic. Let rise at least 1/2 hour until doubled in size. While dough is rising, heat 2 cups water and 2 Tbs. baking soda to simmering; stir often.
After dough has risen, divide it into 12 balls. Roll each ball into a rope about 1/2" or less thick and shape. Using a skimmer, dip pretzel into soda solution and place on greased baking sheet. Bake in preheated 450°F oven for about 10 minutes or until golden. Brush with melted butter and sprinkle on desired topping(s). Makes one dozen.

 
I have trouble shaping mine.

I never get mine shaped like those in the store. I have often call them Bobbi Jo's knots.
