...try getting ahold of a bag of raw, shelled pumpkin seeds.
Spray a non-stick pan generously with cooking spray and heat over medium-high heat until hot. Add a cup or two of pumpkin seeds (raw, shelled) and spray the top of the seeds with more cooking spray.
Heat and toss the seeds for a minute or two. Add a generous sprinkle of your favorite spice mix. I've used southwestern (Mexican) spice mix and Cajun. Both were delicious.
Toss the seeds with the spices and keep the pan moving until you start to hear the seeds talk back to you. They will pop, and occasionally jump out of the pan as they reach the proper temperature.
Keep tossing for maybe a minute (more or less) and then empty the seeds into a bowl or onto a shallow tray to cool. Once they cool to the touch, ENJOY!
Good stuff. I'm trying lemon pepper next, and then a greek spice blend.
