Peanut Butter Pound Cake

Serving Size : 12

1 cup butter -- softened

1 1/2 cups granulated sugar

1 cup firmly packed brown sugar

1/2 cup creamy peanut butter

1 teaspoon vanilla extract

5 large eggs

3 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1 cup milk

10 ounces swirled milk chocolate and peanut butter morsels

confectioner’s sugar -- for dusting

Preheat oven to 325°. Spray a 12-cup Bundt pan and set aside.

Beat butter, sugars, and peanut butter at medium speed until fluffy. Add vanilla. Add eggs, one at a time, beating well after each addition.

In a separate bowl, combine flour, baking powder, and salt. Gradually add to butter/sugar mixture, alternating with milk, beginning and ending with flour mixture. Stir in morsels. Spoon batter into prepared pan.

Bake for 1 hour and 15 minutes to 1 hour and 25 minutes, until done. If necessary, cover top of cake with aluminum foil to prevent excess browning.

Cool in pan for 10 minutes. Remove to a wire rack to cool completely. Garnish, if desired.

DJ's Peanut Butter Chocolate Chip Poundcake

For Marg in Pa's DJ. I included big chunks of this (w/o icing or garnish) in my holiday baskets last year - everyone raved! I can't find it here so I linked from the old sw*p. It's not as "homemade" as your recipe, tho :eek:)
From marg - "embarrassingly simple. In fact I am making it right now for when DJ gets home tomorrow. He is the self proclaimed peanut butter king.

Cake:
1 pkg yellow cake mix with pudding
1 cup of milk
1/2 cup creamy P/B
1 teaspoon vanilla
3 eggs
1 (12) oz pack. of mini semi sweet chips

Icing:
1/4 cup creamy P/B
1 (6oz) pack of semi sweet chips

Garnish:
2 Tbls chopped peanuts

Heat oven to 350 degrees. Generously grease with shortening and lightly flour a 12 cup fluted tube pan. In a medium bowl combibe cake mix, milk, P/B, vanilla and eggs. Beat at low speed for 1 minute scraping bowl constantly. Beat 2 minutes at medium speed scraping bowl occasionally. Stir in mini chips and pour into prepared pan. Bake at 350 degrees for 45 to 55 minutes or till a tooth pick inserted near center comes out clean and top springs back when touched near the center. Cool in the pan for 10 minutes. Invert onto wire rack or heat proof serving plate. Remove pan. Cool at least 1 1/2 hours.

In a small saucepan melt icing ingredients over low heat stirring constantly till smooth. drizzle warm icing over top of cooled cake allowing some to drip down the sides. Sprinkle peanuts over the icing."

I made this last night and it's terrific! it made 3 mini loaves and 1 medium loaf. thanks.
