I'm having trouble coating peanut butter balls in chocolate...

What's the best way to do this without making a huge mess? I've already tried to coat about six of them, using a fork, but the chocolate seems maybe too thick although it is melted. The chocolate coating is just melted chocolate chips. Should I add a little shortening to it to make the coating thinner? The balls were at room temperature, but I thought refrigerating them might make it easier to coat them without them starting to melt. Also, what utensil should I use to dip them? I know a candy fork would probably work best, but I don't have one. Should I use a regular fork or try putting each one on a toothpick? Any help would be appreciated.

 
Cindy, I might thin the chocolate chips with a little paraffin wax if you have some, BUT......

you lose out a bit on taste if you do that. The paraffin makes them easy to handle once the chocolate hardens, better if they're going to sit out at room temperature, and easier to dip when melted. Otherwise, your idea about shortening is good. I usually refrigerate these before dipping, and I've heard of people freezing them with good results. I use bamboo skewer broken in half to dip them with.

I did refrigerate them with good results and used a teaspoon of shortening. Things are going much more smoothly.

 
you might also try getting Ghiardelli or another brand of baking chocolate.

a friend of mine, who is a chocolatier, told me that chocolate chips really aren't meant for melting and dipping and shouldn't be used to dip. she was surprised I got them to melt uniformly at all. still, it trying to dip strawberries in it was a bear! I haven't had probs since I stopped trying to melt chips smileys/smile.gif

 
Cindy you've probably figured it out and are long ago finished..

but for what it's worth, when I make my buckeyes, I chill the peanut butter balls, add a tiny piece of parafin to the chocoalte and spear the balls with a toothpick to roll in melted chocolate.
