I'm making crab cakes tomorrow and for the life of me I just can't put

together a menu. I've always made them as appetizers but I want to make it dinner tomorrow. A nice salad. OK. That would be fine for lunch but I want it to be more substantial for dinner. What kind of starch? I'm stumped. Any help?

 
A few thoughts..

I'm not sure how you do your crab cakes, so this may not work.

How about a flat bed of potatoes? Sorry, don't have photos to explain, but very thin slices of potatoes, preferably smaller ones, kept whole so slices are round. In a non-stick pan, put a bit of butter or half butter half veggie oil. Put one potatoe slice in center of pan, then overlap another row, etc, then add a layer. If your non-stick skiller is small, you can make one per person, and lay it under your crab cake. Hmm. This is something I'll have to prepare with loads of photos to show the technique.

Appetizer, you can go many ways. Can do an all seafood dinner, and use jumbo shrimp with a pernod cream sauce maybe? Or something entirely different, a curried cauliflower flan?

Green salad, nice after the cake.

Dessert, not too heavy. Maybe fresh fruit with a light coffee sabayon?

Orchid, I have the same problem, which is why I don't make them more often. If your Publix has the

fresh corn for sale this week, that is one of my favorite sides. Either on the cob or cut off and curried, or macque shou, something like that with a green veggie, salad and perhaps a Chicago roll, (also on sale this week).

Another option I've used is oven French fries. Goes really well with the crab cakes. Enjoy them, they're so special, aren't they?

Now I'm getting torn. Yes the corn is on sale this week and I did a search

here before I put in this request and saw one posting (was it you Curious?) that had paired their crab cakes with Macque Shou. Hum...potatoes I have, corn I don't. The last place in this world that I want to be on my day off is at the same place where I work. I think I just worked it out. Potato Galette wins!!!! LOL. Thanks Curious.

Roasted White Corn Salsa

Serving Size : 6 Preparation Time :0:30
Categories : Miscellaneous Vegetables

Amount Measure Ingredient -- Preparation Method

2 cups fresh raw white corn kernels -- about 3-4 large ears
1/4 cup olive oil
kosher salt
freshly ground black pepper
1/3 cup red bell pepper -- finely diced
1/3 cup red onion -- finely diced
1/3 cup fresh cilantro or basil -- chopped
1 teaspoon serrano pepper -- seeded and minced
2 tablespoons seasoned rice wine vinegar
1 tablespoon sherry vinegar
1 teaspoon fresh lemon juice -- or to taste
1 teaspoon honey -- or to taste

Preheat the oven to 425 degrees. Toss the corn kernels with the olive oil and lightly season with salt and pepper. Spread out the kernels in a single layer on a baking sheet and roast until very lightly browned, about 15 minutes. Set aside.

In a separate bowl, combine the remaining ingredients. Stir in the roasted corn. Season with additional salt and pepper, lemon juice and honey, if necessary (depending on the sweetness of the corn). Cover and store refrigerated for up to 5 days.

 
Oh, and Curious....At "Aprons" I made the Turkey, Cheese & Apple Panini

and it is really good. Go get a taste of it. It was a huge hit and I sold out my case all day long.

And to think I can't eat crab...

Nor lobster, shrimp, scampi, prawns or other crustaceans. Allergy. Severe.

I can handle the critters, and I can cook 'em, but I can't eat 'em.

One of my chef loved me for it. He said I was the only one he know wouldn't increase his food cost by sampling the merchandise smileys/wink.gif

 
What about a black bean and corn salsa? It's a little more substantial and could be serve with the

crab cakes.

 
Here on the Chesapeake Bay the usual accompaniment

for crab cakes are hush puppies,cole slaw and corn on the cobb.

 
Your suggestion now has me craving onion rings. The crab house

down the street has great batter fried onion rings. They serving them with a dipping sauce made with mayo,cocktail sauce,horseradish and Old Bay seasoning. They were featured on the Food Network recently on Diners,DriveIns,and Dives.
