I'm making peanut brittle today and also making my first attempt at canning.

I'd planned on baking a ton of things today for treats to take to work tomorrow - so far I have done nothing toward that goal.

I'm here to print out the recipe for Penny's Cookies - I just used it last month for DDs birthday party, but can't find the print out in my mass of recipes...

 
Thanks! So far so good. I've got to get some preserving tongs if I'm going to pursue this.

I splashed myself twice with boiling water. Nothing a little aloe vera won't cure.

The jars are cooling. The chutney was a little sweet but otherwise very good.

 
Yes, I sprung for one of the kits and it was well worth it...

I got a kit with tongs/funnel/magnetic jar thingy/bubble popper measure tool. Later I saw a kit with all that and an insert for a stockpot, wish I got that one to begin with. At first I was using a towel in my stockpot and then decided it was far too much of a pain, so found a pot insert kit with a couple of bigger jars.

I've decided I am going to spring for a canning pot at some point because I'd like to do larger batches.

 
Yeah, I had to boil 2 gallons of water in a stockpot that only fit 6 jars.

But I might be hooked.

 
Yeah, I've ended up doing 2 stockpots, but it got a bit hairy. Not going to do that again

Now I do a small pot with lids, the stockpot, and a tea kettle just off boil to top off the stockpot in case I need it (and I have).

It is addicting isn't it? Once I made jam without pectin I sorta felt like a canning goddess, lol.

(Shhh, what I really want now is a pressure canner.)

I'm thinking about making these Apple Molasses (link) for gifting, but not sure I have time.

I am so proud of you with canning! (And impressed that you started with a chutney!) WELL? How

did it come out? I would imagine that a chutney tastes even more flavorful with age. It always makes me smile when I look at our stash of jams in the garage. Such a labor of love that enables you to enjoy the flavor and remember the experience throughout the year.

Very cool trying something new! Hope you enjoyed it!

 
Thanks Barb. The chutney came out nice, but a little sweet for my taste. If I do it again I will try

1 cup sugar instead of 1-1/4. I also think some citrus zest would be nice. Or perhaps as you say the flavor will develop with age.

We don't eat a lot of chutney here so I'll probably give most of it as gifts, which is why I thought it was time to try canning. The reason I did the chutney is that I had a big box of green tomatoes from the garden and I needed something to do with them besides frying them. I did a search and this recipe called mostly for ingredients I had on hand. But go ahead and be impressed with my choice--I won't stop you.
