I'm making Spicy "Oven-Fried" Chicken. Have a question on rack used in baking

Hi,

What kind of rack is called for in baking on a baking sheet? And is a sheet with edges/lip necessary or will may flat sheet suffice?

Would a vegetable sprayed cooling rack (for cookies) work?

Hi Ann. I use a sheet with a lip on it, and...

also use a shallow rack on top of the cookie sheet. The chicken may exude some fat and/or juices which is the reason for both.

The rack I use is similar to a cooling rack. Below is one (from Kiner Kitchens) like mine, except mine's flat.

I do the same. Sheet pan with a lip and a cooling rack.
