Will do...I'm quite excited about this. Question: Should I use the mushroom stems too?

Even with fresh shitake mushrooms I find the stems to be very tough and...

...practically indedible. If you're using dried shitakes, then definitely remove the stems and discard.

Don't discard the stems!!! They're full of wonderful goodness...

set them out to dry and then add them to your stock pot with the other veggies.
