Richard, Pat mentioned using an Emeril recipe for roasting the veggies, but no actual recipe
we have 2 great braised(in the oven) cabbage recipes in T&T that include both carrots and onions too. I would go with one of those and maybe add some pickling spice for "that" taste.
I have never made the St. Patricks vegetables another way since this Emeril.......
recipe. It is easy, make ahead and makes a nice presentation in my Spanish casserole dish. As for the Santa Ana corned beef, I have decided it depends on the corned beef. Cooking it the same way every year, some times it is great and sometimes it is just OK. That baking is easy though
