recipe. It is easy, make ahead and makes a nice presentation in my Spanish casserole dish. As for the Santa Ana corned beef, I have decided it depends on the corned beef. Cooking it the same way every year, some times it is great and sometimes it is just OK. That baking is easy though

 
Have you determined what makes the corned beef just okay, Janet? Is it the cut or brand, you think,

or the method. I really liked the one I baked a couple weeks ago...sooo good.
