Mediterranean Roast Turkey

2 cups chopped onion (about 1 large)

1/2 cup pitted kalamata olives

1/2 cup julienne-cut drained oil-packed sun-dried tomato halves

2 tablespoons fresh lemon juice

1 1/2 teaspoons bottled minced garlic (I used fresh)

1 teaspoon Greek seasoning mix (such as McCormick's) (I used fresh)

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

1 (4-pound) boneless turkey breast, trimmed

1/2 cup fat-free, less-sodium chicken broth, divided

3 tablespoons all-purpose flour

Combine first 9 ingredients in an electric slow cooker. Add 1/4 cup chicken broth. Cover and cook on low for 7 hours.

Combine remaining 1/4 cup broth and flour in a small bowl; stir with a whisk until smooth. Add broth mixture to slow cooker. Cover and cook on low for 30 minutes. Cut turkey into slices.

Betty, not sure if you know what's wrong with your oven, but two quick

checks are:

1. pull the oven away from the wall, unplug it, wait one minute and replug. Turn on the oven starter to see if the oven works. Mine did.

2. If you have an electric oven and the burners are working, but not the oven heating elements, bend down and look along the path of the heating element. If you spot something that looks like a black bubble, it means you have a "hole" or "break" in the electrical path and that's why it's not working. Very simple to replace. Look at the inside back of the oven. You should see screws holding the heating element on. Take it to an appliance parts store and get a new one. Rescrew it in.

On the other hand, you could be like my friend at work who has REFUSED to get her oven fixed for two years. Her husband has been cooking out on the grill for...yes, two years now.

 
You are quite the electrician! I'm impressed. Too funny about your friend.

I'm not too sad. Low expectations are fine with me:) Really I have an crock pot, stove, bbq and an electric turkey roaster. My idea of roughing it. I've made various cookies, that I'll bake en masse when the electrician comes on Monday. Fingers crossed though that it can be fixed. The repairman has been here twice and an electrician once. The kids are coming home for Christmas so all's good.
Thanks for the advice though Marilyn - I'll definitely copy and paste these suggestions.
