making veggie stock while they are at church and the house smells so good. I can't wait for them to return to a pot of lovely soup. Or should I make risotto?

I've never really bothered to make vegetable stock before and you know, I'm wondering why I haven't before. So far it's been simmering for 30 minutes and it already tastes fantastic.

Here's what's in it:

REC: Cleaning Out Anna's Fridge Vegetable Stock

4 carrots, scrubbed and chopped roughly

2 leeks, halved, washed and green part roughly chopped - white part reserved

1 large yellow onion, roughly chopped with skins

3 large shallots, roughly chopped with skins

4 cloves garlic, smashed

3 stalks celery, roughly chopped

large handful celery stems

5 small tomatoes, quartered

a bay leaf

miscellaneous herbiage: rosemary, dill, oregano, marjoram, thyme

10 whole peppercorns

olive oil

2 Brita pitchers full of water

Brown the leeks, onions, celery, carrots and shallots in the olive oil over high heat for 10-15 minutes. Add everything else and simmer for 90 minutes, strain with a mesh strainer and filter if desired through cheesecloth....

Now back to sock knitting while it finishes!!!

My friend is like that. She wouldn't sit on our leather couch over a 10-day visit.

She sat either on the floor or on an old Queen Ann chair I had reupholstered. I didn't have to heart to tell the chair still had its original stuffing: horse hair.

I don't mind folks having their principles, but I do mind being lectured in my own kitchen while preparing my own food (hearing the evils of eggs, white sugar, Splenda, honey, cheese, meat...ad nauseum).

 
Yu, thanks so much! I was getting ready to cook the risotto when guests were added to the dinner

and they decided to do tacos instead. Prawn tacos! Hooray for making an exception to the vegan rule! and they were so good too. so the risotto will be tomorrow, either mushroom or butternut squash...

I must say I could not do this vegan thing on my own, my system is just not accustomed to the level of beans required and that's all I'm gonna say 'bout that.... smileys/bigsmile.gif

 
She orders her shoes/belts from a vegan source to ensure it has no leather product. But....

she owns a horse and rides it, so she's sitting her butt on a leather saddle then. I just don't get it. She even special-ordered her upscale Subaru to get cloth seats since that version only came with real leather upholstery.

On the other hand, she showed up at my airport starving and cranky because she left home without eating and then had 4-hour travel time to FL. Now...come on, if you're going to put that level of restrictions on your own food intake, you should carry an acceptable snack at all times. A vegan granola bar? A bag of nuts? As a last ditch, I suggested she eat her own hemp purse---a bit chewy but full of fiber! Her Crankiness failed to appreciate my humor.

Oh...and after all that lecturing in my kitchen about the way I cook/bake, she showed up the next year eating a blueberry muffin---from Panera! I'm pretty darn sure Panera doesn't do vegan muffins.
